HONEY MEAD





Honey Mead



Mead is commonly referred to as the ancestor of fermented drinks, with the oldest sample thereof dating back to 740 BC. It is made from a mixture of 3 simple ingredients: honey, yeast and water. It can be fermented for 1 week, or up to several years, and various methods render it to a range of sweet or dry; flat or bubbly.

Pickled Mushrooms



Foraged mushrooms are one of the most rewarding things to add to a meal, having gone and found the fungi yourself. I harvest a relatively large amount of Pine Rings from the Western Cape forests, and opt to pickle them to develop their interesting flavour and have them go a bit further than one evening meal.
